This slow-cooked, tender meat, often lamb or goat, is a staple of weekend gatherings and celebratory feasts. To truly experience the authentic taste of this delicacy, one must seek out a dedicated barbacoa restaurant, or “barbacoa de hoyo,” where the meat is cooked for hours in an earthen pit.

One such establishment, a true gem of Mexican gastronomy, is located just outside Mexico City. Named “El Buen Borrego,” this family-run restaurant has been serving barbacoa for over three generations. The air is thick with the scent of roasted maguey leaves and slow-cooked meat, a fragrant promise of the meal to come. Their barbacoa is prepared in the traditional style, wrapped in maguey leaves and slow-roasted for over 12 hours in a stone-lined pit. The result is unbelievably tender, smoky meat that falls off the bone.
