Chile rellenos (2soft chile poblanos)
Chile Relleno Clásico Our signature dish and a true taste of Mexico. We start with a fire-roasted poblano pepper, carefully peeled and deseeded, then generously stuffed with a blend of melted Monterey Jack and Oaxaca cheeses. Each pepper is then lightly coated in a delicate, airy egg batter and fried to a golden perfection. Served atop a vibrant house-made tomato salsa, rich with hints of garlic and cilantro, and accompanied by fluffy Mexican rice and perfectly seasoned refried beans. A comforting classic that's crispy on the outside, cheesy and tender on the inside.

The Heart of Mexican Tradition: A Barbacoa Restaurant Listing in Mexico
In the vibrant culinary landscape of Mexico, few dishes hold as much reverence and tradition as barbacoa. This slow-cooked, tender meat, often lamb or goat, is a staple of weekend gatherings and celebratory feasts. To truly experience the authentic taste of this delicacy, one must seek out a dedicated barbacoa restaurant, or "barbacoa de hoyo," where the meat is cooked for hours in an earthen pit.One such establishment, a true gem of Mexican gastronomy, is located just outside Mexico City. Named "El Buen Borrego," this family-run restaurant has been serving barbacoa for over three generations. The air is thick with the scent of roasted maguey leaves and slow-cooked meat, a fragrant promise of the meal to come. Their barbacoa is prepared in the traditional style, wrapped in maguey leaves and slow-roasted for over 12 hours in a stone-lined pit. The result is unbelievably tender, smoky meat that falls off the bone.
